PURPOSE OF THE POSITION:

 

Responsible for a high quality a la carte and buffet menu, including setting a menu, relevant planning, preparation, training and supervising a particular section of the kitchen to deliver and maintain exceptional a la carte and buffet meals.

 

 

QUALIFICATIONS & EXPERIENCE

 

  • A culinary certificate or diploma
  • Minimum 3 years’ experience as a Chef de Partie in a 7-star boutique lodge environment.
  • Strong expertise in degustation menu planning and execution.
  • Proven skill and creativity in culinary arts with a passion for innovation.
  • Demonstrated ability to independently manage a kitchen section.
  • Computer literate and familiar with kitchen management systems.

 

 

KEY ACCOUNTABILITIES

 

  • Prepare dishes consistently to the highest standard, adhering to proper cooking methods and recipes.
  • Collaborate with the Sous Chef to ensure mise en place is completed efficiently and to standard.
  • Maintain top-quality presentation and portion control across all dishes.
  • Drive innovation through creative menu development and food-and-beverage pairing ideas.
  • Stay current with global culinary trends and bring fresh techniques and ideas into the kitchen.
  • Monitor stock movement, assist with daily orders, and maintain par stock levels.
  • Support food cost targets through effective waste control and productivity management.
  • Ensure all equipment is cleaned, maintained, and stored according to SOPs.
  • Reinforce our brand’s guest experience journey through exceptional food quality and presentation.
  • Conduct regular inspections to ensure consistency and adherence to recipes and plating guidelines.
  • Uphold service standards that exceed guest expectations.
  • Adhere to HACCP and company food safety standards.
  • Champion safe work practices and participate in hazard identification and reporting.
  • Ensure compliance with health and safety policies for all staff and work areas.
