PURPOSE OF THE POSITION
To control the overall operation of the Bakery department by coordinating and facilitating the production of fresh and quality products, maintaining recipe adherence, hygiene and food safety standards and promoting excellent customer service in order to achieve profitability.
QUALIFICATIONS & EXPERIENCE
- National Senior Certificate (Grade 11/12).
- 3 years of bakery and/or confectionery experience.
- At least 1 year in a supervisory role.
- Knowledge of bakery operations, customer service, or related clerical/operational skills.
- Strong planning, attention to detail, and administrative skills.
ADVANTAGEOUS
- Diploma or Certification in Bakery
- SAP or ARCH system knowledge
KEY ACCOUNTABILITIES
Attainment of Budgeted Results
- Drive sales performance to achieve monthly turnover targets.
- Control shrinkage, waste, and departmental gross profit.
- Prepare for stock takes and resolve stock variances.
Stock Management & Merchandising
- Ensure accurate stock rotation, stock level control, and timely ordering.
- Maintain strong merchandising and QDVP4 standards.
- Ensure range availability, planograms, and promotional stock levels are consistently met.
Preparation of Specialities
- Produce and present speciality bakery products on time and in an attractive manner.
- Manage production schedules and volumes.
- Ensure customer orders are completed accurately and timeously.
Housekeeping, Health & Safety
- Maintain high standards of hygiene and food safety.
- Monitor equipment cleaning, servicing, and cooler/fridge temperatures.
- Ensure all areas comply with health and safety regulations.
People Management & Leadership
- Supervise, guide, coach, and develop bakery staff.
- Conduct performance reviews and identify development needs.
- Plan weekly work schedules, regulate breaks, overtime, and leave.
- Enforce company dress code and personal hygiene standards.
General & Ad Hoc
- Maintain confidentiality and handle incidents (accidents, losses, theft, etc.).
- Attend required meetings, workshops, and training.
- Support other store areas when needed.
