PURPOSE OF THE POSITION:
To lead and supervise the services & team in the assigned food and beverage outlet to ensure the delivery of outstanding guest experiences and financial profitability of the business.
QUALIFICATIONS & EXPERIENCE:
- A Diploma in Tourism & Hospitality or related qualification
- A minimum of 3 years’ experience in hosting in a contemporary or fine dining restaurant set-up in a 4* and 5* hotel or lodge.
- Computer literate (MS Office/Office/Excel/PowerPoint)
- Innkeeper/Opera/Micros systems experience
- Wine, Sommelier or Beer course will be an added advantage.
- Drivers licence
KEY ACCOUNTABILITIES:
- Coordinate daily Front of the House and Back of the House operations.
- Supervise the cleanliness, neatness, and tidiness of the dining room.
- Monitor effectiveness of workflow and sequence of service during service periods and provides constant hands-on support.
- Prepare duty rosters of the F&B team, ensuring correct manning levels and even distribution of work.
- Monitor customer satisfaction and respond to customer feedback and complaints.
- Inform the Head Chef of any complaints, negative feedback from guests and staff.
- Advice the Head of Departments or Head Chef of any improvement needed in relation to kitchen operation including updates to SOPs.
- Maintain a thorough working knowledge of F&B SOPs and ensure they are adhered to through constant observation and training.
- Conduct the pre-service shift briefing to ensure effective and efficient communication, providing waiters with specific guidance and information to perform effectively in the coming shift.
- Ensure opening and closing checklists are completed daily.
- Monitor and assist in the completion of weekly cleaning schedules.
- Ensure the team understands upselling techniques through continuing team engagement on product knowledge and business performance.
- Ensure all equipment is in good working condition with maintenance department.
- Check daily forecast and ensure all function sheets/menus are correct and ready for service.
- Coordinate regular stock taking on Food & Beverage as well as operating equipment at specified intervals; daily, weekly, and monthly.
- Supervise the standard of presentation and service of all food orders and ensure compliance with plating guide.
- Conduct daily hygiene walkabouts, complete the required checklists, and enforce the correct cleaning standards, Health & Safety standards, and operating equipment.
