PURPOSE OF THE POSITION:
To deliver quality, presentation and preparation of baked goods and pastries through innovative and varied menu planning, preparation, training, maintenance of equipment contributing new-to-world culinary experiences in line with quality standards and procedures
QUALIFICATIONS & EXPERIENCE:
- Grade 12 or Higher Certificate
- 3-year apprenticeship in bakery or baker or culinary Certificate
- 3 experiences in a bakery in 4* or 5* hotel/lodge operations.
- Sound knowledge of ingredients used for baking, the using of machine and equipment, production processes of bread, muffin and pastries as well as simple cakes, quality control.
- Proficient in various cooking techniques and methods, including pastries, cakes, mousses, high level of creativity, combined with ability to handle the pastry production,
- HACCP trained or Knowledge of Food
KEY ACCOUNTABILITIES:
- Prepare a variety of bread, rolls, pastries, and baked goods according to recipes and established standards.
- Collaborate with the CDP Pastry or Pastry Chef to ensure mise en place is completed for the section to the required standards within the given time frame
- Maintain weight control and product quality during production of goods, by taking correct and accurate measurement.
- Maintain ongoing understanding of the ingredient consumption required for daily production and informs the CDP Pastry or Pastry Chef when fluctuations occur.
- Handle and utilise all materials and goods with the utmost care during production to eliminate waste.
- Ensures bakery and equipment are maintained according to proper health and safety as well sanitation standard.
- Maintains proper working order and cleanliness of all mixers and ovens and communicates any breakdowns or abnormalities to the appropriate team members.
- Estimate baking needs, requisition adequate supplies ,inventories supplies and keep records of products made and used.
- Create, bake and decorate pastries and desserts according to specific dietary requirements, example (gluten free, sugar free, diabetes- friendly etc.).
- Inspect & clean food preparation areas, ensure safe personal hygiene & sanitary food-handling practices, HACCP, labelling practices, hygienic handling & storage of equipment & utensils.
- Ensure that all food is prepared and served according to per the receipts and plate guideline.
- Inform CDP Pastry or Pastry Chef on ingredient orders, maintains par stock levels and accepts and stores food deliveries according to SOPs.
- Support the Food cost target, with control of wastage and productivity to ensure maximum profit.
- Checks station prior to leaving to ensure cleanliness, proper disposal/removal of food and proper storing and labelling.
- Effectively support, control cleanliness and maintenance of the kitchens and stewarding area at all times and support daily checks done by supervisors.
- Perform regular inspection of food preparation and presentation to maintain the required standards.
- Adhere to HACCP regulations concerning health, safety, or other compliance requirements, as well as brand standards and HACCP policies and procedures.
