To direct and oversee all aspects of the culinary and beverage operations. The role will be responsible for planning and execution of Food & Beverage operations at highest standards. It will further demonstrate leadership, creativity, integrity and consistency in performance.
QUALIFICATIONS & EXPERIENCE:
- Bachelor’s degree in food and Beverage Management/Culinary Arts/Restaurant Management
- 8 years’ experience in 4* and 5* Food & Beverage Management, with at least two years at senior management level.
- Great appreciation of lodge operations, key hotel performance indicators and or Business Efficiencies/ratios
- Wine courses or additional businesses courses etc will be an added advantage and strong customer service ethic.
- HACCP Certification will be an added advantage.
KEY ACCOUNTABILITIES:
- Develop the annual food and beverage strategic initiatives/plans to drive the set strategic outcomes.
- Manage and optimize performance ratios to align with international benchmarks.
- Oversee the design and implementation of menus and oversee the costing of menus and design of recipes.
- Oversee the arrangements for F&B special events, banqueting, private functions, and catering for weddings or corporate gatherings to increase revenue, and promote special events, offers, and promotions.
- Design, develop and review standards for food and beverage in relation to service delivery and guest satisfaction.
- Lead teams to attain outstanding guest feedback that consistently positions restaurants for top recognized industry awards.
- Manage the Food and Beverage Cost of Sales Value Chain.
- Lead the teams in attaining a sustainable F&B business model with optimum efficiencies that attain the desired (F&B GOP, F&B Prime Cost Ratio, and Restaurant Seat Occupancy Rates for various mealtimes).
- Formulate the annual food and beverage budgets that are informed by the strategic plans and operational requirements and manage the department's budget, including revenue and expense forecasting.
- Implement effective controls of food, beverage and monitor the food and beverage budget to ensure efficient operation and that expenditures stay within budget limitations, including achieving budgeted revenue and labour expenses.
- Ensure Food & Beverage Brand Identity and brand promises are delivered authentically and consistently in a manner of excellence.
- Develop Standard Operating Procedures for the department and always update them to remain relevant.
- Ensure that there is a BCP (Business Continuity Plan) in place and that it is continuously reviewed and tested.
- Control the quality of the food and beverage prepared and ensure they served as per the receipts and plate guideline.
- Analyse, review, share and use Guest feedback/ guest review reports to continuously improve F&B Guest Feedback Scores.
- Assist with proactively communicating market trends and possible changes in guest preferences and expectations on F&B offering to General Manager at mandated meetings.
- Demonstrate a sound awareness of policies and procedures, ensuring the dissemination of information to all team members.
- Champion the identification and reporting of hazards, evaluation or risks, and design and implementation of hazard and control measures.
- Maintain knowledge of all health and safety representatives, first aid officers and fire wardens for the department, ensuring their active role in the ongoing safety of the department.
