PURPOSE OF THE POSITION:             

 

To deliver quality, presentation and preparation of baked goods and pastries through innovative and varied menu planning, preparation, training, maintenance of equipment contributing new-to-world culinary experiences in line with quality standards and procedures.

 

QUALIFICATIONS & EXPERIENCE:

  • Grade 12.
  • Previous experience as a Baker in 4* or 5* hotel operations
  • Computer literate
  • Knowledge in confectionery and desserts making.
  • Sound knowledge of ingredients used for baking, the using of machine and equipment, production processes of bread, muffin, and pastries as well as simple cakes, quality control, cost control.
  • Strong knowledge of baking techniques, pastry arts, and dessert presentation.
  • HACCP trained.

 

KEY ACCOUNTABILITIES:

 

  • Manage the bakery section for optimum production, quality, and taste.
  • Deliver products of the highest quality in terms of freshness, taste, and consistency
  • Works with the Pastry Chef to ensure mise en place is completed for the section to the required standards within the given time.
  • Ensure that all dishes are correctly garnished, have the correct portion and sized and are presented on the prescribed, serving dish in the prescribed manner.
  • Ensures that all items of equipment, which has been used, are correctly stored after they have been cleaned.
  • Create and update the baking and pastry menu in collaboration with the Pastry Chef, bakery products.
  • Inform Executive Pastry Chef on ingredient orders, maintains par stock levels and accepts and stores food deliveries according to SOPs.
  • Maintains proper working order and cleanliness of all mixers and ovens and communicates any breakdowns or abnormalities to the appropriate team members.
  • Adhere to HACCP regulations concerning health, safety, or other compliance requirements, as well as brand standards and HACCP policies and procedures. 
  • Champion the identification and reporting of hazards, evaluation or risks, and design and implementation of hazard and control measures.
  • Performs order placing for following day’s activities.
