PURPOSE OF THE POSITION:

 

Oversee the entire stewarding operation and supervise the sanitation, hygiene, and cleanliness of the back of the house, operating equipment in line with health & safety procedures and standards.

 

QUALIFICATIONS & EXPERIENCE:

 

  • National Trade Certificate in Chemical training
  • Minimum of 5 years’ experience
  • Able to manage multiple kitchens and the staff canteen.
  • Proficient in Microsoft Office programs
  • Knowledge of food safety and hygiene regulations. 
  • Health and safety certificate
  • HACCP trained

 

KEY ACCOUNTABILITIES:

 

  • Formulate and develop hygiene SOPs and ensure that all stewarding staff comply with the above-mentioned SOPs and policies.
  • Oversee all food handling areas, including the cleanliness and orderliness of all kitchens during all service periods, and in close relation to the kitchen team to assure the proper execution of such tasks is observed in all areas. Set up workstations, cleanliness and storage of dishes, filling dish machines, ensuring correct chemical levels, maintaining efficient traffic patterns in kitchen, etc.
  •  Initiates, monitors, and partakes in regular stock takes including consumables and operating equipment and hygiene audits.
  • Source chemicals and supplies at the most cost-effective rate in conjunction with stores.
  • Inspect all kitchen areas and ensure compliance with HACCP standards.
  • Ensure all extractor fans and ventilators are cleaned per set timelines in accordance with health and safety standards.
  • File and maintain records of all cleaning checklists and verify completion of cleaning duties. 
  • Control and monitor payroll costs through the maintenance of proper records, rosters, time books, and effective scheduling of employees and submit to HR.
  • Schedule staff rosters and ensure all shifts are covered with sufficient staff.
  • Review and approve staff hours recorded on the Jarisson system to ensure accuracy and compliance.
  • Ensure that ER/IR issues are dealt with per the company code of conduct and culture.
  • Oversee the proper usage of chemicals, including the correct quantities and operating equipment, to prevent accidents and ensure a healthy working atmosphere.
  • Facilitate the reporting and investigation of injuries and illnesses arising from workplace activities, recommending corrective actions to prevent or minimize the chance of recurrence.
