PURPOSE OF THE POSITION:
To assist with the food preparation and cooking tasks of staff meals under the supervision of the Chef de Partie according to established food quality standards and deliver a consistent culinary experience.
QUALIFICATIONS & EXPERIENCE:
- Minimum of Grade 12 with a culinary certificate
- Minimum of 1 year experience in a Commis Chef position
- Knowledge of Food Safety systems (HACCP)
KEY ACCOUNTABILITIES:
- Assist in the preparation and cooking of meals for staff, ensuring all food items are prepared in accordance with set recipes, quality standards, presentation standards, and food preparation checklist.
- Ensures that all mise-en-place is completed prior to food service periods.
- Prepare the supplies and equipment needed for the daily operations of the main kitchen in coordination with the Chef de Partie as required.
- Set up and break down the workstation.
- Regulate the temperature of ovens, broilers, grills, and roasters.
- Assist Chef de Partie/Demi Chef de Partie to establish standard recipes and ensure compliance.
- Ensure food quality, food taste, food presentation, and food requisition.
- Assist in serving meals to staff during allocated mealtimes, ensuring prompt and courteous service.
- Ensure that staff are served with the correct portion sizes and that food is delivered on time.
- Maintain and clean all equipment after use and ensure proper storage.
- Keep stores, refrigerators, and freezers in the department clean and tidy.
- Ensure labeling of dates is labeled on products according to requirements.
- Ensure daily kitchen opening & closing procedures are adhered to.
- Articulate and maintain developed standards, product knowledge, and grooming.
- Manage and maintain food presentation according to the standard menu guide.
- Adhere to HACCP regulations concerning health, safety, or other compliance requirements, as well as brand standards and HACCP policies
