PURPOSE OF THE POSITION:
To maintain the cleanliness and proper organization of the dining and kitchen areas, including all surfaces, and to keep operating equipment under control according to health, safety, and hygiene standards.
QUALIFICATIONS & EXPERIENCE:
- Minimum Grade 10.
- 1 year experience in a similar role within the hospitality industry
- Knowledge of proper chemical handling
- Knowledge of HACCP.
KEY ACCOUNTABILITIES:
- Wash and sanitize dishes, glassware, flatware, and cooking utensils either by hand or using commercial dishwashers.
- Keep the kitchen and dining areas clean, organized, and well-maintained. This includes cleaning workstations, equipment, and floors.
- Wash and disinfect kitchen and storeroom areas, including tables, tools, knives, and equipment, to ensure sanitary conditions and meet departmental standards, including using sanitizers required by the health department.
- Empty full trash cans, ensuring each can is clean, relined, and covered, and maintain the dumpster area.
- Assist in stocking supplies, such as cutlery, glassware, and cleaning materials. Report inventory needs to the Chief Steward.
- Organize cleaning chemicals and supplies and ensure they are stored appropriately and kept separate from food products.
- Ensure proper and safe handling and storage of equipment, returning equipment to an appropriate location.
- Fill soap and chemical dispensers in all food and beverage areas.
- Ensure that all chemicals are used correctly—correct quantities and correct operating equipment.
- Operate cleaning equipment and tools to ensure only clean and sanitary items are used in the kitchen, including operating the dish machine, pot-scrubbing station, and trash compactor.
