PURPOSE OF THE POSITION:

 

To supervise and coordinate the activities of the stewarding team during assigned shifts.  Ensuring cleanliness, hygiene, and maintenance of all kitchen and dining areas, as well as the proper handling and storage of equipment and supplies. Maintain adherence to health and safety standards and provide leadership in maintaining operational efficiency and a high standard of cleanliness across the food and beverage outlets.

 

QUALIFICATIONS & EXPERIENCE:

  • Minimum Grade 12 plus Higher Certificate
  • Minimum 2 years’ experience as a steward supervisor
  • Basic knowledge of health and safety regulations in a food services environment

 

KEY ACCOUNTABILITIES:

  • Supervise day-to-day operations and assignments of the stewarding staff, communicate objectives and expectations, and assign/schedule work.
  • Ensure deep cleaning commences nightly and one kitchen deep cleaning once a week.
  • Set up workstations, cleanliness and storage of dishes, filling dish machines, ensuring correct chemical levels, maintaining efficient traffic patterns in kitchen, etc.
  • Ensure proper handovers between shifts, including the briefing of key operational issues and priorities.
  • Conduct regular checks on temperature controls for food storage, preparation, and waste handling.
  • Ensure that all waste disposal protocols are followed and waste is disposed of properly according to the hotel’s standards.
  • Report any issues related to HACCP standards or food safety to the Chief Steward for immediate action.
  • Supervise dishwashing and kitchen equipment cleaning processes, ensuring proper sanitization practices are followed.
  • Ensure that critical control points for food safety are effectively managed and maintained by the team.
  • Ensure all stewarding tasks comply with health & safety standards, HACCP regulations, and government health regulations.
  • Assist in monitoring the use of cleaning supplies and materials, ensuring adequate stock levels are maintained.
  • Assist in the correct ordering and usage of all chemicals within the department and outlets, including appropriate training in accordance with the rules and regulations.
  • Ensure appropriate purchase, storage, usage, cleaning, and inventory of all F&B operating equipment, and run the stewarding operation of the property according to policies and the highest food safety and hygiene standards.
  • Assist the Chief Steward with the organization and smooth operation of daily activities.
  • Give clear instructions to stewards on how to execute all cleaning duties expected.
  • Continuously monitor and enforce health and safety standards within the kitchen to ensure a safe working environment for all staff members.
  • Oversee the proper usage of chemicals, including the correct quantities and operating equipment, to prevent accidents and ensure a healthy working atmosphere.
  • Distribute and ensure the consistent usage of personal protective gear (PPE) by all Stewards.
