PURPOSE OF THE POSITION:
To deliver quality, presentation, and preparation of sushi and Asian offerings in compliance with recipes and standards in the Ocean Cellar Restaurant while delivering an exceptional guest experience.
QUALIFICATIONS & EXPERIENCE:
- Minimum Grade 12 with a Certificate in Culinary Arts/Cookery
- Minimum 3 years’ experience as a Sushi Chef in a 4* or 5* hotel operation
- Computer literate
- Excellent knowledge of Japanese cuisine
- Good knowledge of various sushi types and sushi-rolling techniques
- International experience in a high-end Japanese, Asian or Korean fusion restaurant will be an added advantage
- HACCP trained
KEY ACCOUNTABILITIES:
- Manage a sushi station with regards to the planning, preparation, set-up, and execution of food items.
- Ensures that all mise-en-place is completed prior to food service periods.
- Prepare all types of sushi, including maki, nigiri, and sashimi, ensuring consistency to the level required and ensuring proper cooking methods are adhered to.
- Manage food prep activities, like boiling rice and ensuring dishes are correctly garnished, have the correct portion and size, and are presented on the prescribed, serving dish in the prescribed manner
- Ensures a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assurance.
- Ensures proper food handling, presentation, portion control, and maintenance of appropriate serving temperatures.
- Maintain the cleanliness and sanitation of all equipment, supplies, and utensils within the work area before and after meal service; keep display equipment clean and free of debris during meal service to assure compliance with all health & safety policies, production, and merchandising requirements.
- Recommend food and beverage pairing menus and dishes to enhance the dining experience.
- Monitor food cost budgets and associated food controls.
- Articulate and maintain developed standards, product knowledge, and grooming.
- Manage and maintain food presentation according to the standard menu guide.
- Ensure the team lives and follows the O&L Leisure Guest Experience Journey.
- Control the quality of the food and beverage prepared and ensure they are served as per the receipts and plate guidelines.
