PURPOSE OF THE POSITION
To control the overall operation of the Butchery department by coordinating and facilitating the production of fresh and quality products, maintaining recipe adherence, hygiene and food safety standards and promoting excellent customer service to achieve profitability.
QUALIFICATIONS & EXPERIENCE
- Grade 11/12 (NQF Level 4).
- Minimum 3-years’ experience in a Butchery department.
- Minimum 1-year supervisory experience.
- Meat cutting & deboning knowledge.
- Knowledge of cold chain, stock rotation, waste control, recipes, ingredients, and ordering processes.
ADVANTAGEOUS
- NQF Level 5 Qualification / Certificate in a Butchery related course.
- SAP / ARCH systems knowledge.
KEY ACCOUNTABILITIES
Attain Budgeted Results
- Achieve monthly turnover targets by effectively utilising resources.
- Control shrinkage, waste, and maintain departmental gross profit.
- Prepare for stock takes, liaise with the Administrative Controller, and resolve stock variances.
- Drive sales and maintain QDVP4 merchandising standards.
Stock Management & Merchandising
- Oversee stock rotation, quality, levels, and range availability.
- Submit and receive stock orders on time.
- Follow receiving procedures and manage Inter‑Departmental Transfers (IDT).
- Plan and order promotional stock and conduct Mule Train activities.
Preparation of Specialities
- Prepare and present specialty products on time and attractively.
- Ensure customers’ orders are prepared timeously.
- Manage production schedules and determine required volumes.
Housekeeping, Health & Safety
- Enforce hygiene and food safety standards at all times.
- Ensure correct equipment temperatures, machine cleaning, oil filtering, and fat trap maintenance.
- Ensure all areas are left clean and hygienic at close of business.
People Management & Leadership
- Supervise, coach, and guide all butchery staff.
- Conduct performance reviews and support development needs.
- Manage recruitment, discipline, scheduling, overtime, and leave planning.
- Ensure dress code compliance and promote personal hygiene.
- Provide on‑the‑job training and reinforce operational standards.
General Duties
- Maintain confidentiality of documents and company information.
- Attend to reasonable requests, incidents, and crisis situations.
- Participate in meetings, training sessions, and stock takes as required.
- Assist in other areas where needed.
