To maintain the kitchen and surrounding areas in a clean and sanitary manner by following the cleaning schedules and adhering to the Health & Hygiene Regulations and company policy and procedures.
QUALIFICATIONS & EXPERIENCE:
- Grade 10
- 1 year experience a 4* or 5* Hotel/Lodge or in a similar role within the hospitality industry.
- Knowledge of proper chemical handling.
- Knowledge of HACCP.
KEY ACCOUNTABILITIES:
- Wash and sanitize dishes, glassware, flatware, and cooking utensils either by hand or using commercial dishwashers.
- Rack dirty items (silverware, plate ware, etc.), sort silverware, inspect, pull, and stack cleaned items, allow cleaned items to air dry, spray all racked items with hot water to loosen and remove food residue, and breakdown dirty bus tubs.
- Operate and maintain cleaning equipment and tools, including the dish washing machine, hand wash stations pot scrubbing station, and trash compactor.
- Dispose of kitchen waste and trash properly. Maintain recycling programs as necessary.
- Empty full trash cans, ensuring each can is clean, relined, and covered, and maintain the dumpster area.
- Cleans floors, walls, ceilings, doors, vents, windows, cooking equipment, dishes, cutlery, crockery, and glassware in accordance with instructions.
- Maintains the cleanliness of the dish and pot wash areas.
- Ensures that waste is sorted, and waste area and bins are cleaned on a daily basis.
- Collect and prepare cleaning tools and chemicals for the allocated responsible area.
- Collect and arrange the mise-en-place (OS&E) for kitchen day-to-day requirements.
- Assist in stocking supplies, such as cutlery, glassware, and cleaning materials.
- Fills soap and chemical dispensers in all Food and Beverage areas.
- Comply with health and safety standards within the kitchen to ensure a safe working environment for all staff members.
- Adhere to HACCP regulations concerning health, safety, or other compliance requirements, as well as brand standards and HACCP policies and procedures.
- Ensure that all chemicals are stored safely and correctly in designated areas, following proper labelling and storage guidelines to minimize the risk of accidents or chemical-related health issues.
