Purpose of Position

To efficiently and accurately process fish through manual filleting, ensuring optimal flesh recovery, minimal product waste and consistent adherence to quality and production standards. The position requires skilled knife handling and precise filleting techniques to achieve prescribed productivity, yield and product quality targets while maintaining strict compliance with food safety, hygiene and occupational health and safety requirements.

Minimum Qualifications and Requirements

• Grade 12
• Basic literacy and numeracy skills.
• Must have experience in manual fish filleting or fish processing (and should be indicated on your CV)
• Ability to demonstrate practical knife-handling skills and effective hand-filleting techniques.
• Understanding of basic food safety, hygiene and workplace safety requirements.
• Good hand-eye coordination, manual dexterity and attention to detail.
