PURPOSE OF THE POSITION
To manage the overall operations of the Butchery Department by producing fresh, high-quality products in line with approved recipes, while maintaining strict hygiene and food safety standards. The role is responsible for delivering excellent customer service, driving profitability through strong cost control, reducing shrinkage and waste, and leading a skilled team to consistently uphold high operational standards that translate into high quality offerings for customers.
QUALIFICATIONS & EXPERIENCE
- Grade 12 Certificate / NQF Level 4.
- Minimum 5 years’ experience in a butchery environment, of which at least 2 years must be at supervisory level.
- Technical and specialist knowledge, including: Cold chain management, Product range & recipe knowledge, Ingredients & production processes, Waste control, Stock rotation & ordering, Deboning and Meat cutting & classification
ADVANTAGEOUS
- Higher Certificate / NQF Level 5 in Meat Cutting or Deboning.
- 4 years’ experience, with at least 1 year at supervisory level.
- SAP and/or ARCH systems knowledge.
- Good financial acumen.
- Certificate in Food Safety Management.
KEY ACCOUNTABILITIES
Attain Budgeted Results
- Achieve monthly turnover targets through effective resource utilisation.
- Implement controls to meet shrinkage and waste targets.
- Prepare for stock takes, resolve variances, and drive sales.
- Drive Quality Standards through approved Standard Operating Procedures.
Sales, Merchandising & Customer Experience
- Drive sales through attractive displays, full shelves, and product Availability.
- Maintain full counters during peak periods.
- Handle customer complaints professionally and resolve issues promptly.
- Ensure Seasonal products are produced.
Stock Management & Merchandising
- Manage ordering, receiving, storage, rotation, and quality control of stock.
- Control Inter-Departmental Transfers (IDT), waste, and implement mule train procedures.
- Control shrink, markdowns and yield losses.
- Ensure accurate pricing, labelling, and promotional execution.
Preparation of Specialities
- Ensure all specialities are prepared and displayed on time and to standard.
- Enforce strict recipe adherence and accurate product costing.
- Manage portion control, production planning, scheduling, and customer orders.
People Management & Leadership
- Recruit, train, coach, and develop departmental staff.
- Plan work schedules, leave, breaks, and control overtime.
- Conduct performance management and address disciplinary matters.
- Ensure compliance with company policies, dress code, and behavioural standards.
- Train staff on product knowledge, cutting, packing, and quality standards.
General Responsibilities
- Maintain confidentiality of company information.
- Attend meetings, training sessions, and stocktakes as required.
- Support store operations during peak periods or staff absences.
- Ensure full compliance with company policies and procedures.
- Provide support across various store management functions.
