PURPOSE OF THE POSITION:
Responsible for supervising a particular part or parts of the kitchen. Responsible for quality of all meals and all relevant planning, preparation, training and maintenance of all meals.


MINIMUM QUALIFICATION & EXPERIENCE REQUIREMENT:

  • Grade 12 or equivalent to the same grade Culinary certificate or diploma
  • 3  years’ experience in a similar position in a 5* star establishment
  • Microsoft Office knowledge
  • Knowledgeable about HACCP and health regulations


KEY JOB OUTPUTS:

  • Ensure all mise-en-place is completed prior to food service periods
  • Adhere strictly to agreed cooking methods and food preparation standards
  • Maintain efficient, clean, and hygienic work practices at all times
  • Ensure all equipment is properly cleaned after use and correctly stored
  • Maintain clean and orderly stores, refrigerators, freezers, and storage areas
  • Prepare food items to the highest quality standards using appropriate skills and techniques
  • Monitor and minimise food wastage and guide junior staff accordingly
  • Place orders for the following day’s operational requirements
  • Support the development, training, and performance of junior kitchen staff and trainees
  • Attend nominated training, induction, and refresher programmes
  • Assist with problem-solving and operational challenges during shifts
  • Perform additional duties as required by the Chef or Senior Management
  • Apply the “clean as you go” principle consistently
  • Maintain knowledge of purchasing budgets, stock controls, fridge lock-down procedures, and issuing policies
  • Manage food cost controls in line with approved budgets
  • Ensure compliance with health, safety, hygiene, and food storage regulations
  • Keep all health and safety documentation accurate and updated daily
  • Be familiar with first aid, fire, emergency procedures, and required reporting
  • Demonstrate professionalism, maturity, and emotional intelligence at all times
  • Participate in meetings to support smooth kitchen and deli operations
  • Protect confidential information and company trade secrets
  • Report and, where possible, manage incidents involving accidents, fire, theft, loss, or damage
  • Provide operational support across all areas during absences or crisis situations
  • Uphold company standards and ensure policies and procedures are consistently followed
