PURPOSE OF THE POSITION:
To produce and maintain a high‑quality a la carte and bakery products for Model. This includes developing bakery menus, planning and preparing products, training staff, and supervising the assigned bakery section to ensure consistent delivery of exceptional baked goods.
QUALIFICATIONS & EXPERIENCE
- A culinary certificate or diploma.
- Minimum 3 years’ experience as a Chef de Partie in a 7-star boutique lodge environment.
- Strong expertise in degustation menu planning and execution.
- Proven skill and creativity in culinary arts with a passion for innovation.
- Demonstrated ability to independently manage a kitchen section.
- Computer literate and familiar with kitchen management systems.
KEY ACCOUNTABILITIES
- Produce baked goods and confectionery items consistently to the highest standard, following approved recipes, methods, and production schedules.
- Work closely with the Bakery Supervisor to ensure all mise en place (mixing, dough preparation, proofing, baking, decorating) is completed efficiently and on time.
- Maintain excellent product presentation, portion accuracy, and consistency across all bakery items.
- Contribute to product innovation by developing new bakery and confectionery ideas, flavours, seasonal items, and display concepts.
- Stay updated on local and global bakery trends and introduce modern techniques where appropriate.
- Monitor stock levels, assist with daily ingredient orders, and ensure par levels are maintained.
- Support cost control by minimising waste, following batch production plans, and applying efficient work methods.
- Ensure all bakery equipment (ovens, mixers, proofers, utensils) is cleaned, maintained, and used according to SOPs.
- Uphold the Model brand experience by delivering products that meet quality, freshness, and presentation standards.
- Conduct regular checks to ensure adherence to recipes, baking temperatures, timings, and product finishing guidelines.
- Maintain exceptional service standards by ensuring products are always fresh, appealing, and available for guests.
- Adhere to HACCP and all Model food safety, hygiene, and allergen‑control procedures.
- Promote safe work practices, reporting hazards and contributing to a safe bakery environment.
- Ensure compliance with health and safety policies for all bakery staff and work areas.
