PURPOSE OF THE POSITION:
To fill all salami products in their relevant casings and hang or pack products according to product specifications as per production plan.
MINIMUM QUALIFICATION & EXPERIENCE REQUIREMENT:
- Grade 12
- 1 year experience in a similar position
- Knowledge of processed meat processes
KEY JOB OUTPUTS:
- Machines, packaging material, and casings prepared, set up, and ready according to the daily production plan and supplier specifications
- Production equipment functioning correctly, with scales, chillers, and machines checked, maintained, and faults reported promptly
- Meat and meat products prepared accurately and on time to support uninterrupted production
- Products filled, hung, packed, and transferred to climate chambers according to production and quality requirements
- Correct product weight, sealing quality, expiry dates, and packaging integrity consistently achieved and verified
- Product samples taken during start-up, production, and post-production to confirm compliance with filling and quality standards
- Batches correctly tagged and traceable in line with the production plan
- Daily production records completed accurately and timeously
- Stock items moved, counted, and supported effectively during stock-taking activities
- Quality defects, damages, or deviations identified early and reported to the supervisor for corrective action
- Casings inspected and weight measurements performed to ensure compliance with prescribed specifications
- Full compliance with company quality standards, food safety requirements, and cold chain regulations
- Work areas, machines, and equipment kept clean, sanitised, and hygienic at all times following clean-as-you-go principles
- Health, safety, hygiene, and GMP requirements consistently adhered to, including correct PPE usage
- Machinery cleaned, sanitised, shut down correctly, and stored safely at the end of production
- Support provided across departments and tasks as required to ensure smooth production operations
